An absolute belter of a pasta dish. You’ll like it: sausage and fennel is among the finest mixtures ever. The meat has a lot flavour, so get some respectable sausages in there. This works with any sort of pasta, from spaghetti to penne and even gnocchi.

Components
1 head of broccoli, reduce into small florets
300g wholemeal fusilli pasta
2 tbsp gentle olive oil
1 bulb of fennel, thinly sliced
400g high-quality pork sausages, casings eliminated
2 cloves of garlic, crushed
½ tsp chilli flakes
Juice of ½ lemon
Salt, to style
25g parmesan cheese, finely grated, to serve
