1 cauliflower, damaged into florets

600 g lean pork mince

2 tablespoons further virgin olive oil

2 golden shallots, thinly sliced

3 cloves garlic, thinly sliced

1 tablespoon Smoky Spice Mix

2 tablespoons white wine vinegar

1 1⁄2 cups (375 ml) Tomato and Basil sauce

1 cup (250 ml) salt-reduced hen inventory (see notes)

60 g parmesan, shaved

Rocket Salad:

4 cups (140 g) rocket

1 Lebanese cucumber, thinly sliced

2 tablespoons Easy French dressing Dressing

Technique

Half-fill a medium saucepan with water and convey to a rolling simmer. Add the cauliflower and prepare dinner, stirring sometimes, for 8–9 minutes, till tender. Drain and put aside.

In the meantime, take 1 tablespoon quantities of the pork mince and roll it into balls. Warmth 1 teaspoon of the olive oil in a big frying pan over medium–excessive warmth (see notes). Return all of the meatballs to the pan, add the tomato and basil sauce and inventory and prepare dinner, stirring, for 1–2 minutes. Add the cooked cauliflower and stir gently to mix.

To make the rocket salad, mix all of the components in a bowl.

Divide the cauliflower ‘gnocchi’ between 4 bowls, prime with the parmesan and a few freshly floor black pepper and serve with the rocket salad.

NOTES
