salmon recipe.
Foil-Pack Mediterranean Salmon
Components:
• 1 pint of cherry tomatoes
• 8 oz. of broccolini, ends trimmed
• 8 oz. of small purple or fingerling potatoes
• 1 15 oz. can of cannellini beans, rinsed and drained
• 1 lemon, juiced
• 1 tablespoon of olive oil
• 1 tablespoon of salt-free Mediterranean spice mix
• 4 center-cut parts of salmon filet (5 oz.)
Instructions:

Warmth the oven to 400°F. Tear 4 sheets of aluminum foil, about 12″ x 15″
every. -
Divide the greens into 4 equal parts and set within the middle of every
foil sheet. Add 1/3 cup beans to every. -
In a small bowl, combine collectively the lemon juice and olive oil. Drizzle 2 Tbsp
over the veggies. Sprinkle every packet with ½ tsp spice mix. -
Set a chunk of salmon on high of the veggies, drizzle with remaining lemon
juice combination, and sprinkle with remaining spice. Fold up the edges of the
foil and crimp collectively, forming a pouch. Switch to a baking sheet. -
Bake whereas coated till the fish is cooked by and veggies are tender,
or about 15 to twenty minutes. Watch out when opening the packets, as they
will likely be crammed with scorching steam.
