2 tsp finely grated lemon rind

2 cloves garlic, crushed

1 Tbsp additional virgin olive oil

1kg piece boneless pork stomach, rind scored

2 tsp effective sea salt

2 Tbsp maple syrup

1 Tbsp white wine vinegar

Sea-salt flakes and freshly floor black pepper, to season

Honey mustard slaw

2 Tbsp crimson wine vinegar

1 Tbsp honey

1 Tbsp wholegrain mustard

¼ cup additional virgin olive oil

¼ crimson cabbage, shredded

¼ cup flat-leaf parsley leaves
