1. Pour milk into pint-size glass jar, and stir in kefir grains. Cowl jar with a number of layers of cheesecloth or paper towels, and safe with rubber band.
2. Retailer jar at room temperature out of direct daylight and permit kefir to ferment till thickened. (Wholesome kefir grains will thicken milk in 24 hours, although this course of could take as few as 12 hours in hotter temperatures, or so long as 48 hours in cooler temperatures.) Verify kefir periodically to gauge thickness.
3. When combination reaches desired thickness, pressure kefir into glass, stirring gently till solely kefir grains stay in strainer. (To maintain kefir grains viable, stir into new batch of milk inside 48 hours.)
4. Mix ready kefir, orange juice, vanilla, and sugar in blender. Pulse to mix. Mix in ice cubes individually till as creamy and frothy as you want. Style, and mix in additional sugar to sweeten as desired.
