The gathering of islands off the coast of West Africa generally known as Cape Verde was colonized by the Portuguese from the Age of Exploration properly into the twentieth Century, from 1462 till the islands gained their independence in 1975. Right this moment’s Cape Verdean diaspora is rediscovering its Jewish roots. Labored by pressured labor from West Africa, the Cape Verdean persons are a combination of Africa, Iberia, and all of the worlds in between, together with Jews who sought refuge from the Inquisition. When tailored to characteristic kosher cuts of meat, cachopa, one of many island nation’s signature dishes, makes a wonderful Shabbat stew or substitute for cholent. Components

  • 3 Tbsp. olive oil, divided, plus extra as wanted
  • 1 medium yellow onion, coarsely chopped (1½ cups)
  • 4 garlic cloves
  • 2 bay leaves
  • 6–8 cups hen or vegetable broth
  • One 15-oz. can white hominy, drained
  • One 14.5-oz. can gentle kidney beans, drained
  • ½ cup frozen lima beans
  • 1 lb. kosher sausage, sliced ½-in. thick
  • ¼ lb. kosher beef or lamb bacon, minimize into small cubes
  • 2 cups coarsely chopped inexperienced cabbage or kale
  • 1 giant russet potato, peeled and minimize into 1–in. cubes (2 cups)
  • 1 giant candy potato, peeled and minimize into 1-in. cubes (2 cups)
  • 1 medium plantain, peeled and thinly sliced into ½-in. thick rounds (1 cup)
  • ½ medium butternut squash (or different winter squash), peeled and minimize into 1-in. cubes (1 cup)
  • ¼ cup inexperienced beans, sliced lengthwise
  • One 5½-lb. hen, minimize into 8 items
  • Kosher salt and freshly floor black pepper
  • 2 medium plum tomatoes, quartered
  • ½ cup store-bought sofrito
  • Coarsely chopped cilantro, for garnish

Directions

  1. To a big pot over medium-high warmth, add 2 tablespoons of the oil, the onion, garlic, and bay leaves. Cook dinner, stirring sometimes, till the onion is translucent and aromatic, 5–7 minutes. Add 6 cups of broth, then stir within the hominy, kidney beans, and lima beans. Convey to a boil, then flip the warmth all the way down to low and prepare dinner at a simmer till the beans are very tender and the flavors have mingled collectively, about 45 minutes. Take away from the warmth and put aside.
  2. To a big skillet over medium warmth, add the sausage and bacon and prepare dinner, stirring sometimes, till they’ve rendered just a little of their fats, 5–6 minutes. Add the cabbage, potatoes, plantain, squash, and inexperienced beans and prepare dinner, stirring sometimes, till the cabbage has wilted, about 12 minutes. Switch the contents of the skillet to the pot, wipe the skillet clear and return it to the range.
  3. Season the hen throughout with salt and black pepper. Set the skillet over medium warmth and add the remaining oil. As soon as the oil is sizzling and shimmering, add the hen items in batches and prepare dinner, turning sometimes, till evenly browned throughout, about 14 minutes per batch.
  4. Switch the browned hen to the pot, and add the tomatoes. If essential to submerge the hen, add extra broth to the pot, then set over low warmth and prepare dinner, stirring sometimes and skimming any foam off the floor, till the hen is cooked by way of, about 1 hour.
  5. Stir within the sofrito and proceed cooking till the hen may be very tender and the broth is flavorful and concentrated, about 20 minutes. Take away from the warmth, cowl, and put aside till the juices have cooled barely and thickened about half-hour.
