Ramps, a wild allium, are early spring signposts in woodlands, farmers’ markets and on menus. A brand new ramp vinegar, referred to as Zeal, is from Brightland, an organization based mostly in Los Angeles that will get its merchandise, largely olive oils, vinegars and honeys, from small producers in California and elsewhere. This pale golden vinegar made in partnership with Lindera Farms, which forages the ramps within the Shenandoah Valley in Virginia, has an aroma and taste distinguished with delicate pungency. It’s glorious for dressing grain salads, poached leeks and spring greens.
