Cowl and simmer 1 hour till veal and greens are tender. Take away to a platter and maintain heat. Soften butter in a skillet and sauté mushrooms for five minutes. Pour drippings from the Dutch oven right into a measuring cup. Add sufficient water to make 2 cups. Return combination to the Dutch oven and warmth to boiling. Whisk within the flour and add the peas. Cook dinner till combination is thickened and peas are tender. Add mushrooms and warmth. Beat egg yolks flippantly.
