Elements
150g wholewheat couscous
Gentle spray oil, for cooking
1 purple onion, thinly sliced
1 tbsp zero-calorie granulated white sugar replacer
1 tbsp balsamic vinegar
30g (1 bunch) recent coriander leaves, roughly chopped
50g spinach leaves
2 skinless rooster breasts
40g pomegranate seeds
20g flaked almonds
For the pomegranate dressing
1 tbsp clear honey
2 tbsp pomegranate molasses

Technique
1. Place the couscous in a big salad bowl and pour over 350ml boiling water. Stir and put aside for the water to soak up, then enable it to chill fully.
2. Coat the bottom of a small frying pan with mild spray oil
