Shrimp with Tomatoes, Capers and Feta Cheese 

  • 2 tablespoons olive oil
  • 1 medium onion, finely chopped
  • 3 garlic cloves, minced
  • 1 teaspoon dried oregano
  • 1/2 teaspoon pepper
  • 1/4 teaspoon salt
  • 2 cans (14-1/2 ounces every) diced tomatoes, undrained
  • 1/4 cup white wine, non-compulsory
  • ¼ teaspoon crimson pepper flakes, non-compulsory
  • 1 pound raw medium shrimp, peeled and deveined
  • 2 tablespoons capers
  • 2 tablespoons minced contemporary parsley
  • 3/4 cup crumbled feta cheese

1. In a big nonstick skillet, warmth oil over medium-high warmth. Add onion; cook dinner and stir 4-6 minutes or till tender. Add garlic and seasonings; cook dinner 1 minute longer.   • 1 pint cherry or grape tomatoes, halved
  • 1 cup diced cucumber
  • 1 cup Kalamata olives, sliced
  • 3 tablespoons ]contemporary dill, minced
  • Salt and freshly floor black pepper
  1. Carry a big pot of evenly salted water to a rolling boil. Add the orzo and cook dinner till al dente.
  2. Drain shortly in a colander within the sink and instantly cool by letting water flow over it. Put aside till fully cool and drained.
