My husband and I like rooster satay, a preferred Southeast Asian dish that is sometimes grilled on skewers and served with a spicy peanut sauce as an appetizer. Right here, I skip the skewers and the grill and air-fried the rooster as an alternative, which is ideal for weeknight dinners. I serve the rooster and sauce wrapped in lettuce leaves and garnished with lime, cilantro and minced shallots. This may even be wonderful over jasmine rice or with flatbread.
Method tip: Do not overcrowd the air-fryer basket and all the time flip your meals midway.
Swap choice: Swap soy sauce for gluten-free tamari; as an alternative of lettuce wraps, you may serve over rice to make it extra substantial. Do not have an air fryer? Cook dinner the rooster on a grill or grill pan.

Preparation
For the rooster:
In a big bowl or zip-top plastic bag, whisk collectively the coconut milk, curry powder, fish sauce, soy sauce, ginger, salt and shallots. Add the rooster and toss to utterly coat. Cowl and put aside for not less than half-hour or as much as 1 day within the fridge (the longer the higher).
For the peanut sauce:
In a small bowl, mix the peanut butter, lime juice, soy sauce, Sriracha and ginger, and blend with a fork till easy.
Add a bit little bit of heat water, 1 tablespoon at a time, till it reaches a consistency free sufficient to drizzle over rooster. Put aside or refrigerate in an hermetic container for as much as 5 days.
To cook dinner and serve:
Spritz the air fryer basket with oil. Working in batches if wanted, add the rooster to the air fryer basket in a single layer. Cook dinner at 400 F, till the rooster is cooked by within the heart, 8 to 9 minutes, flipping midway by.
Separate the pinnacle of lettuce into leaves. Serve the rooster with the lettuce leaves for wrapping and lime wedges for squeezing. Garnish with the peanut sauce, cilantro and shallots.
