Cilantro and Carrot Rice – Mediterranean Wellness

This recipe works effectively to enhance some grilled shrimp or fish.

You’ll Want

  • 3 Tablespoons butter
  • 4 medium carrots, peeled, chopped
  • 2 giant purple bell peppers, chopped
  • 1 cup chopped onion
  • 2 garlic cloves, minced
  • 4 cups long-grain white rice
  • 6 ¾ cups hen or vegetable broth
  • ½ cup chopped inexperienced onions
  • 2/3 cup chopped recent cilantro
  • Salt and pepper to style
  • Diced tomato

Instructions

  • Soften butter in heavy, giant pot over medium-high warmth.
  • Add the following 4 components; sauté 5 minutes.
  • Add rice; stir for two minutes.
  • Add broth; carry to boil.
  • Scale back warmth to low, cowl and prepare dinner till rice is tender, about 20 minutes.
  • Combine within the inexperienced onions and cilantro.
  • Season with salt and pepper.
  • Garnish with diced tomato
